Boil rice in two parts of water and 2 pinches of iodized salt until al dente.
Thaw spinach in a saucepan, stirring occasionally. Cut lime in half; juice one half and sprinkle on the fish. Cut the other half into four thin slices.
Peel onion and cut into small cubes. Mix together with coconut milk and curry powder in a saucepan. Crush garlic, add to the pan and bring all ingredients to the boil. Add spinach and cook covered. Season with salt and pepper.
Salt fish, and pepper and top with slices of lime. Arrange fish on the spinach, cover for 5 minutes until done.
Serve with brown rice.
For higher energy needs, multiply recipe by 1.5 to 2.
The dish may also be enriched with 1 Tbsp. pine nuts.
